Icing sugar is essentially sugar turned into very fine powder that is used to decorate or to sweeten the mixture of all kinds of cakes.

To prevent the sugar from hardening, a small amount of maize or wheat flour is added, so the soft, velvety texture is preserved for long periods of time.
